We prefer to eat yacon in raw. First, remove the outer brown skin and inner white skin by peeling with a knife as the skin has a resinous taste, to reveal the amber colored sweet crunchy fresh. Like all tubers, there are no seeds to remove, so it is quick and easy toprepare.

What does yacon root do? The yacon root contains an indigestible fiber known as fructooligosaccharides (FOS) or inulin. FOS is asugar that your body can't digest, and that's a good thing! Yacon root has many natural health benefits and is used to aid digestion, prevent digestive issues, reduce cholesterol, and promote a healthy weight.

How do you make yacon syrup? Blitz up your yacon to a pulp, then pass through a sieve or cheesecloth to extract the juice. (alternatively use a juicer). Add to a large saucepan. Bring thejuice to boil, on medium heat and keep it continuously simmering, stirring occasionally.

Can you freeze yacon? One year we had far too many yacon tubers so decided to freeze some of them. Once frozen they last seemingly forever. I remove the tubers from the freezer, peel them with a vegetable peeler, slice them and eat them. When frozen yacon tubers are easy to peel and easy toslice.
