These pears are best harvested when they are slightly immature andhard to the touch. They then should be put in cold storage to trigger ethylene gas production, the process that causes pears to ripen. Most pears should naturally produce ethylene in sufficient quantities to trigger their own ripening.

What color is a ripe pear? Some pears, like the Bartlett variety, change color as they ripen (Bartlett goes from green to yellow), but many other pears, including d'Anjou, do not. To determine ripeness, hold the pear in the palm of your hand and then gently apply pressure into the neck of the pear with yourthumb.

Do red pears get soft? When ripe, Red Anjou pears are juicy and soft with subtle, sweet flavors and mild notes of lemon andlime.

Do pears ripen off the tree? Unlike other fruit, pears do NOT ripen properly when left on the tree. They are one of the only fruits that must be picked unripe and allowed to ripen off the tree. So, you pick when the pear is mature (not ripe) and let it ripen off thetree.
